Marcala

A honey-process coffee from Marcala, Honduras, with notes of raspberry, plum and honey.

APROCOMSA are the Fairtrade certified arm of COMSA. It began in 2001 with 61 farmers, and since committing to organic farming and seeking access to speciality markets, COMSA has grown to more than 1,600 members. Socially, COMSA invests in education through the COMSA International School, which offers innovative learning methods to nearly 200 students from pre-primary to secondary levels.

This coffee is picked when 100% ripe. It is then placed in barrels with water for 48 hours. This helps with a greater selection of grain. Then, it is pulped without water, to reduce consumption and help protect the environment. Once the bean is pulped, it is dried in a solar drier. The first days it gets moved every 15 or 20 minutes, then it is done every half hour, reducing as it dries, taking up to 21 days.
