Coopedota R.L. is one of the most iconic coffee companies in Costa Rica, and are backed by over 1,160 farming families. Rolando Fonseca and his father Higinio Fonseca, the owners of “El Encanto” have been part of the Cooperative since the late 1970s. They visit the farm daily with the goal of producing high-quality, environmentally friendly coffee.
Cherries are picked only when deep red, then delivered to a separate collection area at the Coope Dota mill, where the lots are kept separate to maintain traceability. The cherries are then washed and floated before a mechanical pulping that leaves 5-10% of the mucilage intact, before being dried on beds in the greenhouse, with everything carefully controlled until moisture is 10-11%.
